High Protein Waldorf Salad Recipe


I am someone who only enjoys cooking if I have time and NOT when I'm starving after a long day of work. And let alone try a new recipes. I work 9 to 6, followed by an hour of traffic, to get home to whatever easiest to make. Which is a big reason why all the recipes we share are easy to make and with minimal ingredient.

This waldorf salad recipe is no exception Add on top of lettuce for a salad or enjoy with some crackers. Either way, its a simple meal, but with plenty of protein and nutrients.

Ingredients:
1. diced medium apple
1. lemon juiced
8oz diced chicken
1/2 cup of walnuts
1 cup cut grapes
1 chopped celery stalk
1 cup of plain greek yogurt
1 tsp apple vinegar
1 tbsp mustard
2 tbsp light mayonnaise (optional)
Dash of salt and pepper

Mix all in a big bowl and serve. Done!
